If you want to treat yourself and your friends and family to something extraordinarily good and sweet, here is the recipe for our famous Cheese Cake:
For the cake base, you will need:
- 100 g soft butter
- 200 g crushed Digestive biscuits
- 1/2 teaspoon ginger
For the cake filling, you will need:
- 600 g mascarpone
- 150 g brown sugar
- 3 eggs
- 1/2 dl egg yolk
- 1 vanilla bean
- 1/2 dl lemon juice
- Lemon Curd (the recipe for this will be in the December newsletter)
Mix the butter, crushed biscuits, and ginger together and press it down into a silicone cake mold.
Soften the mascarpone with a spoon and add the sugar. Once the sugar is dissolved, add the 3 eggs, egg yolks, and vanilla. Finally, mix in the lemon juice. Sift the mixture into the mold over the biscuit base.
Make a lid for the mold out of aluminum foil and place the mold on a deep baking tray. Pour boiling water around the mold. Bake the cake in the oven at 160 degrees C for one hour. The cake should be firm and light in color.
Cool the cake down to 5 degrees C, carefully remove the cake from the mold, and spread lemon curd on top. Dip the knife in boiling water when cutting the cake. This ensures clean edges on the cake.
