Ingredients:
450 grams all-purpose flour
20 grams baking powder
10 grams baking soda
50 grams butter
3 dl buttermilk
Instructions:
- Sift the flour, baking powder, and baking soda into a bowl. Mix well.
- Rub the butter and flour lightly between your fingertips until the mixture has a consistency similar to finely ground breadcrumbs.
- Make a well in the mixture and pour in the buttermilk. Quickly and gently bring the dough together with a spatula to form a soft dough. It’s important not to over-knead with your hands.
- Place the dough on a work surface and gently press it flat with your hands until it is about 2 cm thick. Use a cookie cutter (5 cm in diameter) to cut out 12 scones.
- Let the scones rest on a baking tray for 15-30 minutes. Preheat the oven to 200°C and bake the scones for about 10 minutes until they are golden.
- Scones should be served freshly baked. Split a scone in half and spread a thick layer of clotted cream* or whipped cream on it, and top with fresh strawberries, homemade jam, or lemon curd**.
The best results are achieved with organic ingredients.
*Clotted cream is a rich cream (about 48-60% fat) made by heating unpasteurized/unhomogenized cream in a water bath in the oven at 80°C for 8-16 hours. The thick yellow cream is scraped off the liquid and cooled before serving. The remaining liquid (skim milk) can be used for baking.
