Ingredients:
6 organic eggs
6 tablespoons homemade mayonnaise
½ teaspoon Colman’s English mustard powder
Salt and pepper

Preparation:
Dissolve the mustard powder in a little water. Whisk together the salt, pepper, mustard powder, and mayonnaise. Add the boiled, chopped eggs and mix everything together. Serve on bread and garnish the egg salad with cress!
Recipe for Mayonnaise:
1 pasteurized egg yolk
300 ml grape seed oil
½ teaspoon Colman’s English mustard powder
1-2 teaspoons white wine vinegar
Juice of ¼ lemon
Salt, freshly ground pepper
Instructions:
Make sure your ingredients are at room temperature.
Whisk all the ingredients except the oil together in a bowl, preferably with a whisk. Now add a few drops of oil while continuously whisking. Then add a teaspoon more oil. And another. The oil should emulsify with the eggs, and this should happen relatively quickly and visibly. After that, you can add the oil in a thin stream, a little at a time.
When the mayonnaise starts to thicken, you can add larger amounts of oil. The more oil, the thicker the mayo. Stop when you feel it has a delicate consistency.
