Ingredients:
Pastry:
200 g all-purpose flour
100 g cold butter, diced
1 egg
50 g sugar
1 tsp vanilla sugar
Filling:
3 medium apples
Juice of 1 lemon
2 eggs
1 egg yolk
60 g sugar
1 tsp ground cinnamon
2 dl heavy cream
Powdered sugar for dusting
Preheat the oven to 180 degrees. Grease a 22 cm tart pan or a deep pan with a removable bottom with melted butter and place it in the refrigerator until the butter has set.
Pastry: Sift the flour into a mixing bowl. Rub the butter into the flour with your fingers until the mixture has a consistency similar to grated parmesan. Make a small well in the flour. Take the egg and whisk it together with 1 tbsp of water. Pour it into the well along with the sugar, vanilla sugar, and a pinch of salt. Mix the dough together, first with a spatula, then with your hands. When the dough is smooth and even, shape it into a flat ball, wrap it in cling film, and refrigerate for 20 minutes.
Peel the apples and remove the cores. Cut each apple into 8 wedges. Toss the wedges in lemon juice and set them aside in a cool place until needed.
Lightly whisk the whole eggs together with the egg yolk. Mix the cinnamon and sugar together and stir in the cream. Then combine the egg mixture with the cream mixture and set aside.
Roll out the pastry to about 5 mm thickness. Carefully line the tart pan with the pastry, ensuring there are no air bubbles or loose edges. Place the pan in the refrigerator for 30 minutes.
Next, arrange the apple wedges tightly on the bottom. They can be placed closely together, as they will shrink slightly during baking. Finally, pour the egg mixture over the apples.
Be careful not to overfill the tart, as the egg mixture will rise slightly.
Bake the tart in a convection oven for 45 to 60 minutes until the filling is set and the surface is golden. Baking may take longer if the dough and filling are very cold.
Dust with powdered sugar and serve the tart warm, possibly with crème fraîche. We recommend serving a cup of Yunnan Golden Peacock black tea with it.
